Wow, I can’t believe it’s already the third week. Where did the time go? It’s already July, crazy, but anyways. Today we had lots of roasted veggies. There were roasted sweet potato fries, roasted eggplant, and cauliflower. The cauliflower was the winner out of the three. I also harvested some gorgeous lettuce, a carrot, two beets, scallions, herbs, and three cute little snap peas from the garden today 🙂

Kiwi Slices, Roasted Cauliflower (that was almost all gone by the time I got to picture taking!) and a fresh batch of Refrigerator Pickles (I use a Rachel Ray Recipe and it’s delicious!)



The greatest thing to hear today was that kids were taken out to the garden and were so excited to pick carrots and be so surprised that there was something under those long, kind of frill greens. They loved it all! 🙂
