The Last Monday & Tuesday!

Wow I can’t believe it’s the last week of Summer Lunch! This summer really flew by!
Yesterday was fun, we did a tomato tasting of all the different tomatoes growing in the garden. The kids thought it was really cool to be able to see how each variety tasted so different and had different textures. Some were more juicy, some were sweeter or more acidic, and some were mild.

Then today there were buckwheat groats in the closet do I decided to use them! I made them in a similar way as you would oatmeal. I had some fresh peach purée so I added that too. The groats also had cinnamon, clove, and nutmeg added to it. The kids surprisingly were receptive to them. It was great, all of the kids who tried them said they liked them!

Monday Again!

Wow I can’t believe there are only three weeks left of summer lunch! Our interns leave this week and I’m sad to see them leave. They help out so much and will be truly missed! The work they do is definitely appreciated. If it wasn’t for them I wouldn’t of had the time to make some of the fun things I’ve made this summer!

Today we only had a couple kids come in. I got them to try roasted summer squash though by bribing them with the chocolate banana pudding I made the other day. The kicker is the quote from one of the kids. Everyone thought it was so good, I mean who doesn’t like chocolate and banana together?

We had mostly typical items on the salad bar because we prepped the equivalent to 3 salad bars today. So I’ll just include a couple pictures I thought were pretty. Two other sites just got salads bars so we now supply them with the options for their salad bar. It’s so great that more kids now get the opportunity to use a salad bar!

Thursday and Friday post!

So the past couple days have been fun! Yesterday I made a macaroni and cheese with a whole head of cauliflower in it without the kids even knowing! Then today I made a chocolate pudding from avocado, banana and cocoa powder. That pudding tasted like heaven! The banana were nice and ripe so they lent the perfect sweetness. I wish I remembered to snap a picture of the pudding because from looking at it you would have never known it was healthy for you! The salad bar has also been very rainbow like which is the goal!
The garden is exploding right now with peppers, eggplant, and a few summer squash popped out today! I love starting my morning with a stroll through the garden.

This is a sunflower waiting for fresh sunflower seeds to be picked from it. They were really yummy!

Then I picked 7 peppers, 4 eggplant, 3 summer squash, and 1 grape tomato!

These were the options for Thursday!
Those fun purple looking things are roasted purple potatoes that the kids loved. They were seasoned with rosemary, thyme and a sprinkle of salt. The kids raved about them, with a few kids getting a second helping of them!

Then this is the macaroni and cheese with cauliflower in it! Which was another hit among the kids!


Then these were the options today. A few fun things were fruit soup( made with super sweet strawberries and grapes all whirled up in the blender), garden peppers, and sautéed onions from a local farm that were just gorgeous.

Double Post Wednesday!

Today was great at The Open Door, we had at least 11 kids who ate lunch. We had all sorts of things the past two days. The pictures today will be a combination from yesterday and today!

Woo Wednesday!


So today was an awesome day! There were thirteen kids who got lunch today. They loved the baked chicken thighs I made. They were so good we went through all of the chicken made! Even one of the girls who is a tough sell with certain food loved it! I absolutely love days like today. It makes me feel so good inside.

We had kiwi and orange slices, green leaf lettuce, pineapple slices and cantaloupe slices, edamame, and grape tomatoes.



Then there was baked patty pan and summer squash, cucumber slices, crispy cauliflower, and corn on the cob.


The Baked Chicken Thighs

They were seasoned with garlic powder, onion powder, black pepper, thyme, rosemary, Italian seasoning, and a little salt.  Then baked at 375 until cooked through.

Just Another Manic Monday :)


Wow I can’t believe another Monday has come and is almost done. Today was a crazy day it felt like. Have you ever had one of those days where it feels like you wonder what could happen next? Well, today was one of them. It all started with not realizing milk had to be brought to a site, then another site got food delivered even though it wasn’t operating today, I ran out of time to do what I wanted with two different salad bar options, and lastly the avocado fries ended up getting something on them and were inedible. BUT in the end, the day ended up working out completely A-OK. And in life you have your easy days and your days that give you a run for your money. That is what makes life interesting! Ont that note…

I peeked in the garden this morning and everything is growing so lovely. I love walking out to the ten or twelve raised beds and seeing whats sprouting up. There’s something so satisfying about picking a vegetable right off the plant. Today I picked the first two zucchini. Oh my goodness were they ever delicious and almost sweet tasting! The best I have tasted. So, I have included some pictures of what’s popping up right now under the salad bar pictures. 🙂 I hope everyone has a great rest of the week!

We had whole red apples, cucumber boats(I wanted to fill those with something! Tomorrow for sure those will have a filling!), sliced mango, & baked sweet potatoes.


We also had green leaf lettuce, sliced fresh pineapple, grape tomatoes, honeyed beets, and some purple beans that turn green when you cook them!

Today was a really good day. We had 7 kids come in again today. It was also pizza day which is always a favorite! I did have one boy say that said everything was his favorite though. 🙂

Today ended up being a good day for the amount of kids we got. There were seven kids who got lunch today. Considering I plan for ten everyday I’d say 70% is a good number!

The salad bar had something interesting on it today, we roasted radishes! When radishes are cooked they lose their spicy bite and just become these delicious little bites of flavor. Then, we roasted some summer squash and green beans.

Whoa Wednesday!


Today was awesome! The Food Project came in today and ate lunch too. So we had a total of 13 kids who got lunches! Again I sound like a broken record but I love when they come in and we get a high number of kids. I especially love it because the kids are so appreciative of the lunch!

I made a chicken, vegetable, and pasta bake. It had everything from zucchini, garlic scapes, orange peppers, kale, canned tomatoes, onion, peas, ricotta cheese, and pasta in it. Then I sprinkled the top with homemade bread crumbs and Parmesan cheese. Last, I popped it in the oven until the top was nice and brown and heated through. It was delicious! I think about 8 or 9 of the kids had a second scoop of it! It was a huge hit amongst the kids. Days like this make me so happy inside. 🙂

The salad bar options were romaine lettuce, sliced cucumbers, orange pepper rings, radish flowers, multicolored grapes, roasted eggplant, pineapple and mango, grape tomatoes, summer squash rings and I also made a watermelon hedgehog!

Tangy Tuesday


So today was double the number of kids from yesterday!

There were lots if choices on the salad bar today, I think it was ten in total. We made garden guacamole that had lots of fresh lime juice, parsley, steamed and peeled canned tomatoes with some of the juice added, a sprig of fresh oregano, fresh chives, and a sprinkle of cayenne pepper to give it a little spice. It was delicious! There was the vegetable kohlrabi on the salad bar. It will be the vegi that looks similar to an alien head whole. (I’m doing the post from my phone so I can’t figure out how to put titles above the photos). Then we had three different colors of grapes, cherries & pineapple, olives, shredded zucchini & summer squash, and a few of the usuals.
